Potato Salad

Easter Sunday's just around the corner and that means lots of extra Easter eggs. We'll be making deviled eggs, egg salad, and my favorite, potato salad.

My mom taught me to cook at a young age and often delivered recipes from her memory. I was an independent child, which basically meant I didn't follow directions very well. Salad recipes were great because you could improvise and not ruin the outcome as so often happens in baking.

My mom's potato salad recipe became my own recipe, improving each year with subtle differences and it has built quite a reputation. It is one of those dishes I've been asked to bring to parties before I can even offer something new. I hope you give it a try, add your own flare, and create your own family recipe.
