Easy One Pot Chicken Meal

I love to cook, but sometimes I just need dinner ready as soon as possible with very little effort. This is when I grab a cookie sheet, some inexpensive organic chicken drumsticks and any vegetable I have in the refrigerator.

I chop or peel the veggies into large even size portions and I choose between two options for a glaze that pulls together any combination you can imagine. The best part is, it can be done in 5 minutes and thrown into the oven. My family loves the choice of vegetable sides and I love that I can cook an easy one pot meal.

Time To Get Resourceful

If you want to be resourceful, save the bones after dinner and toss them into a ziploc bag. They can remain in the freezer until you have enough to fill a crockpot. If you have 8 or more bones, simply toss them into the crockpot after dinner and make bone broth. Include an onion or celery and fresh filtered water and you will have an immune system building chicken stock in 24 hours on low.

Wait to salt until you are finished boiling. We like to sip ours on a foggy morning. Use it to boil up some ramen noodles next time instead of the MSG packets that come with it. Kids love the broth because it has "no vegetables in it."  Little do they know...
