Easy Cabbage Salad

This is a super, easy, colorful salad to accompany grilled meats and fresh fish. I love to toss it together with fresh herbs and crunchy peanuts right before dinner, but the flavors are best the next day. So make enough for leftovers and toss it in a to go container right after dinner. You'll be so pleased to have a healthy lunch ready to go in the morning.
