Can I Eat Cake for Breakfast?

The most important meal of the day is breakfast. It's the best way to fuel your body for the entire day on healthy fats and proteins and get your metabolism started right. But, did you know your wellness muse used to eat cake for breakfast? What can I say? Nobody's perfect.

Honestly, I still sometimes eat cake for breakfast, but now I sneak as much nutrition into that decadence as possible. In fall, when pumpkins abound, I serve my popular pumpkin pie for breakfast and everyone leaves the house with their tanks full.

In summer however, we need something lighter, yet still jam packed full of nutrition. The baked oatmeal cake, a little experiment I made this past weekend, had everybody excited. If you like oatmeal cookies, and really who doesn't, this cake is for you.

We topped our oatmeal cake with homemade whipped cream, literally just cream and 1 Tbsp maple syrup, whipped to creamy deliciousness. The healthy fat in the cream, the yogurt soaked oats, and the protein from the eggs kept our tummies full for hours and our energy high.

We were full all the way past 2p. Skipping lunch made us hungry for an early dinner so I only had to prep two meals that day. It was a wonderful break!

Bonus for a busy mommy!

Super bonus: lunch should be your biggest meal of the day. It's very healthy to avoid eating late into the evening and it's much healthier to eat your cake in the morning than for an after dinner dessert. Digestion and sleep do not mix.

I recommend you prep this dish out the night before. You'll want to soak the oats in yogurt to make them digestible and more nutritious. Then, the dish should come together in a flash the next morning.
